Winemaking: Grape harvest with a perfect maturation and with high acidity.
Drying on racks for about 40/60 days.
Pressing without destemming and fermentation in wooden barrels.
When the fermentation is finally finished there is a soft sulfidation.
From here starts the process of aging which lasts about a year and
depends on the level of concentration of the product.
During assembly of the barrels,there is a filtration and then
it is bottled with the amount of sulfur minimum to avoid a possible fermentation.
